Paleo Coffee Creamer
From the great low carb forum I've frequented for eight or nine years, comes this fabulous recipe. I finally got around to trying it out this morning.
1 Can Coconut Milk
1 large egg
2 Tablespoons Coconut oil
1 teaspoon vanilla
2 Tablespoons Coconut oil
1 teaspoon vanilla
Beat all together until creamy.
As per normal, I improvised. I didn't have coconut milk, but I had a can of coconut cream. So I opened that and poured off the coconut water which had separated--gave it to the cat. I mixed in two raw eggs, left out the coconut oil, added in the vanilla and a little stevia to give it some sweetness.
I whipped it with my immersion blender using the whisk attachment. It came out like a soft whipped cream.
It is quite delicious, I must say! I may just use this as a whipped cream replacement.
Sourcing
Any good Asian market will have coconut cream, but Trader Joe's also carries it now. I would imagine Whole Foods Market does too.
